Every stop is full of the flavor of the season as well as joyous celebration. Stop in, sip, and enjoy the festivities during the most wonderful time of the year.


Holiday Wine & Sparkling Wine Recommendations

This holiday, serve Cabernet Sauvignon, aged for nine months in American Oak Whisky Rye Barrels and Whisky Bourbon Barrels.

Sparkling Peach: 100% PA peaches. A Semi Sweet alive with sparkling bubbles, juicy sweet peaches and a long finish. $24.50

Brut Reserve: A dry Champagne made from Pinot Noir & Chardonnay cuvee. Richly textured with fine bubbles and a creamy long finish. $26.50


Sparkling Chambourcin
This bubbly embraces the beauty of Chambourcin, showcasing fruity and berry characteristics with elegant bubbles. Produced using the traditional méthode champenoise, this sparkling wine is finished with just a touch of sweetness. Serve well chilled in a tall champagne flute to enhance the tiny streams of bubbles.

Sparkling Vidal Blanc
This beautiful bubbly is made using méthode champenoise, which indicates this wine underwent a secondary fermentation in the bottle. Sparkling Vidal has crisp flavors of lemon and grapefruit with soft, yeasty undertones.

Sparkling Cayuga White
The bubbles are a perfect complement to the fruitiness of this sparkling wine. Cayuga is full of fresh grape characteristics and a soft, smooth finish.


Sparkling Vidal – $14.99
Made from 100% Estate Grown Vidal Blanc, this sparkling wine finishes slightly sweet to create a perfect balance between the crisp acidity of the Vidal grape and of course the bubbles.

Spiced winter red has had the same recipe for over 20 years. Formulated in the mold of a traditional German gluwein, spiced winter red is highlighted by cinnamon, nutmeg and cloves. Perfect for company and a great alternative to eggnog, all you have to do it twist off the cap, warm it in a crock pot, and enjoy. Spiced winter white is the newer addition to our list. We simply describe it as apple pie in a bottle.

Reminiscent of our vineyard manager, Erin’s, visits to the Christmas markets while studying abroad in Austria and Germany, our holiday beverage has a Troxell twist. While gluhwein is traditionally red, we are featuring a spiced white wine—Crooked Stick White (a Grüner Veltliner & Gewürztraminer bled) with mulling spices. Creating Crooked Stick White spiced wine at home is easy with spice packets provided by the winery and not only does it pair deliciously with family gatherings and holiday desserts, it creates a welcoming aroma in your home.


2015 Cuvée Chardonnay (Best in Show – PAFS, Silver Medal LA, Medal Winner F.L.)
The driest of our bubblies is made using the Methode Champenoise. It has aromas of apple, honey, Asian pear and toastiness. Light, crisp and clean, it is a perfect pairing with fresh oysters and other seafood.

2015 Brut Rosé (Medal Winner F.L., Silver Medal LA & PAFS)
Made with 100% Pinot Noir grapes, this sparkling dry Rosé exhibits aromas of strawberry and yeast and has a crisp finish. A perfect start to an elegant meal.

2015 Blanc de Blanc (Silver Medal F.L., PAFS & LA)
This crisp, refreshing bubbly is made entirely from Cayuga grapes. This sparkling wine is slightly sweet and the perfect start or finish to any evening event.


Salute – a sparkling blackberry wine made with Vidal Blanc and Chambourcin. On the sweet side and perfect for Christmas Morning Mimosas. $15.
Midnight Rush – plum bubbly wine in a can. $6/can or $20/4-pack

Holiday Wine Cocktail Recipes


Pomegranate Orange White Wine Cocktail

Serves 1

4 oz. Amore Vidal wine
3 oz pomegranate juice
1 oz fresh range juice from a navel orange
1/2 oz. cognac
mint leaves
fresh pomegranate arils (seeds) or cranberries

Pour wine, juices and cognac over ice in a glass
Add slice of navel orange, pomegranate arils/cranberries and mint leaves to garnish


Clover Hill Caramel Apple Sangria
1 bottle Clover Hill Cayuga White
1 Cup Caramel Flavored Vodka
6 Cups Apple Cider
2 Apples, diced.
Mix all ingredients and blend in refrigerator for 2 hours. Rim you wine glass with cinnamon.

Clover Hill’s Winter Citrus Sangria
1 Bottle of Clover Hill Vidal Verde
8 oz. Lemonade
8 oz. Sprite
1 Lemon – Diced
1 Lime – Diced
1 Orange – Diced
5 Sprigs of Sage

Put the diced fruit and Sage Sprigs in a pitcher and muddle.
Add the Vidal Verde and Lemonade and let blend for 2-4 hours.
Add Sprite and serve.


Cranberry Thyme Spritzers
1 bottle Vidal Blanc infused with fresh Thyme overnight.
Add one cup of White Cranberry juice and 1/2 cup Seltzer.
Serve with fresh cranberries and thyme sprig as garnish.

Harvest Cider
1 bottle of Potion X, 3 oz Harvest (Social Still’s Apple Whiskey) and 1/2 gallon local apple cider. A
dd it all in a sauce pan and let mull with cinnamon sticks for 1 hour.
Serve warm with cinnamon stick and apple slice as garnish

Fireside Martini
3 oz Trio
1 oz Smirnoff Kissed Caramel Vodka
Rimmed with caramel and crushed graham cracker
Serve with brownie brittle and s’mores snack mix.

Holiday Martini
3 parts FHV Passion wine
1 part vanilla vodka
Rim the glass with green colored sugar and garnish with a strawberry.


The “Syllabub”

1/2 cup sugar
1 cup Pinnacle Ridge Riesling
1 quart half-and-half cream
Heavy whipped cream, for garnish
Ground nutmeg, for garnish

1.) Heat the sugar and wine on low heat in a 1.5 quart saucepan until the sugar dissolves, stirring constantly.
2.) Remove from heat and slowly add in the half-and-half.
3.) Beat until frothy; chill completely (about 1.5 hours).
4.) Pour into glasses, top with whipped cream and sprinkle with nutmeg.

Sparkling Wine Pomegranate Orange Punch
Serves 4 – 6

For the Vanilla Ginger Syrup
1 cup water
1 cup granulated sugar
1 vanilla bean
1 thumb-sized piece of fresh ginger

For the Punch
1 bottle Pinnacle Ridge Blanc de Blanc
8 oz pomegranate juice
8 oz ginger beer
4 oz orange juice
2 oz vanilla ginger syrup
2 oranges, thinly sliced
1/3 cup pomegranate arils

Combine all ingredients together in a large pitcher or bowl. Put the orange slices on the inside of the glass before the ice. Fill with ice, then with punch, and a sprinkling of pomegranate seeds.
